What you may not know.... Indian cuisine is the general term for the wide variety of cooking styles from India. In reality, India hosts an even greater number of distinct regional cuisines than the entire European continent.  Indian food is almost always prepared with fresh ingredients along with delicate mixtures of many different fresh and dried spices and the exact recipes often vary greatly from one household to the next. To refer to Indian Cuisine is almost a misnomer, since the regional dishes vary tremendously from region to region.

Peter and Laurie will prepare and serve a meal for 8 – 10 people who love the magical flavors of good Indian cooking.

Suggestions:  First, bite-size delights to snack on with drinks or tea followed by perhaps a silky soup mellowed with coconut milk or a spinach-and-ginger soup perfumed with cloves?

Next?  A choice of fish and seafood transformed by simple rubs and sauces or a chicken dish - perhaps one from western Goa cooked in garlic, onion, and a splash of vinegar; or from Bombay, with apricots; or from Delhi stewed with spinach and cardamom; or from eastern India with yogurt and cinnamon; or from the south with mustard, curry leaves, and coconut.  Or you may prefer lamb, pork, or beef curries or kebabs.

Vegetable dishes, in a tempting array—from everyday carrots and greens or tantalizing preparations of eggplant and okra—served center stage for vegetarians or as accompaniments.

At the heart of so many Indian meals are the dals, rice, and grains, as well as the little salads, chutneys, and pickles that add sparkle.
